I DID IT!!

I hate cooking chicken on bones, well not a whole chicken, but thighs and legs, kinda gross me out. BUT I did it after being inspired by Court-alicious. It was so tasty, just rubbed it with a rub I had for salmon, and popped it in the oven, MMmmmmm!

So I had to post something of beauty,not that the food isn't wonderful, just switchin' it up!
I created this beauty for the holiday season, and she was the bell of the ball, I loved her!

The BEST Green Chicken Enchiladas

Sometimes the simplest things are the best. These are the easiest enchiladas to make and by far my favorite. I love everything Mexican and these are at the top of my list. They don't even need sour cream and I put sour cream on everything.

1 pkg of breast tenderloins
Chicken Fajita Seasoning
A little butter (enough for frying your tenderloins)
1 lb of Muenster Cheese (believe the type of cheese makes a difference)
12 corn tortillas (I buy the jumbo corn tortillas which is 10 ct but they often come with an extra or two)
1 large can green chili enchilada sauce

Season tenderloins with fajita seasoning. Melt butter in a frying pan and add tenderloins. Cook uncovered on med. to med. hi heat for about 5 mins on each side. (Watch them because it may not take quite that long). Remove the chicken and allow to cool. Grate cheese. After chicken cools break it apart with your fingers. Heat 6 tortillas in the microwave for about 20-25 seconds just to warm them (this helps them to keep from falling apart). Put cheese and chicken in tortilla (as much or as little as you want) and then wrap and place fold side down in a greased 9 x13 pan. Repeat with the other 6 tortillas. Pour Enchilada Sauce on top and top with the remainder of the cheese (if desired, depends on how cheesy you want it. We love ours cheesy) Bake covered at 350 for 30 mins or until cheese is melted and is heated through.

Hailey's Favorite Banana Nut Muffins

The secret is that it's really the Lion House recipe for Banana Bread. Honestly quick breads and muffins are the same thing, just different shapes and muffins take far less longer to bake. Faster in my mouth is better.

Makes 1 1/2 dozen muffins or 1 loaf of bread
Set oven to 350*

1/2 cup butter, softened
1 cup sugar
2 eggs
1 cup bananas, mashed
1/4 cup milk
1 tsp lemon juice
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup chopped nuts, optional (I like walnuts)

Cream sugar and butter. Beat in eggs one at a time. Add bananas, milk, and lemon juice. In a separate bowl sift dry ingredients together and add to wet mixture. Add nuts. Grease your pan (or paper it). Pour mix in pan and bake at 350* for 15 minutes for muffins and 1 hour for bread.

ham, green beans and tomato

Ham browned in spicy tomato glaze, mixed with sauteed onions and green beans.

That third ingredient keeps cramping my style.

I served this dish with a side of ramen and lucky charms. Oh wait, I guess they weren't really sides, just what everyone was eating tonight.

Spanish Rice


My husband doesn't really like rice, but he likes Spanish rice. When I made this and brought out the camera to take a picture he said that it doesn't look good, but it tastes good. Brown rice, tomato sauce, ham, and green beans.

Ham 'n' Veggie Frittata with Romesco Sauce

I loved this challenge. I did use Canadian Bacon because unfortunately I don't have any ham in my freezer, but I wish I did. I love ham. Plus I also used whole canned tomatoes that I pureed - I think that counts.





Sauce Ingredients - loved it and it can be used for lots of different things. It would be really good over some grilled chicken.









Potatoes, Asparagus, Onions, Green Beans and Ham!

Raining Today...Good day for Soup!!

Ham and Green Bean Soup!
Diced ham, green beans, pasta, carrots, onion, white beans, garlic, celery, tomatoes and some seasonings- It was really yummy and good thing too because it made a lot and I will be eating it for the next couple of days!


Healthy Drink of the Week- (which has nothing to do with the listed ingredients) SHREK JUICE!
Throw this in that life changing Vitamix!

Introducing Tina Turner

Yes, her name is actually Tina Turner. I will get this out of the way so she doesn't have to explain later. Needless to say, Jarom finally won her over despite his last name.

Tina is one of those people who are sweet, super cute, and easy to like. But the more I find out about her the more I realize how truly inspiring her life really is.

Tina has a few extra challenges in her life. Her oldest two children are mentally handicapped and blind. Then, two weeks ago her third boy was diagnosed with the same eye condition that will cause him to lose his sight. Needless to say, where is a banana creme pie when you want to throw it at your trial's figurative face!!!

Anyway, I think Tina is amazing and when she told me she loved to cook I knew she had to be inducted into the Diva's Who Dish hall of fame. Super awesome girls should be friends, wherever they live and whatever their circumstances.

Love ya, Tina! Can't wait to see your yummy meals!

Brit's been bugging me to put a picture of something yummy I've made, so here it is. I haven't decorated a cake in a year and sadly I don't think I could come close to replicating this if I had to but I did make it once upon a time.

i promise mine is on it's way...

Everything tastes better in a tortilla!!


Drink of choice this season- Vanilla steamer with dash of nutmeg

Cheese, blackbean, sweet potato, arugula, chicken quesadilla!

Chicken- grilled

Blackbeans- mixed with onion (don't tell Tyler), garlic, cumin and oregano

Sweet Potato- steamed and pureed

Arugula- tossed in hot pan with olive oil and salt just until wilted

Then layer it up on a tortilla- monterey jack cheese, thin layer of sweet potato, black beans, arugula, strips of grilled chicken, final layer of cheese! Walah!! it is finished!

Serve with a side of fresh mango salsa and veggie flaxseed tortilla chips. YUM!!

I found it to be quite tasty! Tyler, who was unaware of the food challenge asked, "Why the sweet potatoes??" I was a bit skeptical at first as well, but we have one rule in our house when it comes to eating- don't knock it till you try it! I think it added a yummy sweet taste with the salty.
